The update rate is configurable between every tick and once a minute (1800 ticks), the default is every tick.
/hud: toggles the display
/hud location: toggles between display at top or bottom of screen
/hud clock: toggles time data
/hud facing: toggles facing (N,E,S,W)
/hud biome: toggles biome data
/hud coords: toggles coordinates display
/hud light: toggles light data
Following a command with the word 'color' will cycle the color of that element of the display, for example...
/hud clock color
cycles the clock to the next color.
/hud light type
cycles the light type being displayed between All, Sky, and Block
