A very simple mod that lets you use a crafting table in air and have a crafting GUI pop up. This mod will still work if it is only installed server-side.
This also works with other blocks (the grindstone, smithing table, and more, configurable) (as well as some modded blocks!) and using them in air will open their respective GUI.

For this mod to support a modded block, it must open a GUI when right clicked, and it must not have a block entity attached.
