O is for Tick Freeze Toggle.
If you are in Creative Mode or Spectator Mode then you can press 'o'. Then The game will run the command "Tick Freeze" but if you press 'o' agin then it will run the command "Tick Unfreeze" and will unfreeze the game.
There is an item called "Tick Tock Clock" that can tick freeze a Survival Mode Person's game but only for a certain amount of time.
