Whole veins of ore and entire trees come down at once with Easy Mine Addon 一括破壊アドオン, an add-on that makes resource gathering faster. It uses scripting APIs, so Experimental Features must be enabled in the world settings.
You sneak and break a single block in a group to destroy the whole cluster. This applies to every ore type and to logs, and it also works on magma blocks and clay blocks. Both Fortune and Silk Touch are supported, so you still get the benefits of those enchantments while mining and logging.
